We spent Thanksgiving this year at a friend’s house. It was a fun and relaxing day. The best part was the amazing gluten free rice pudding that Kelly made for us. It was sweet and creamy and the pumpkin gave it the perfect festive touch! I plan to steal her recipe and make lots of this stuff for my family over the Christmas period. I’m a big fan of persimmons. I first discovered them whilst living in South Korea. They were everywhere and I loved their crunchy, sweet taste. Ever since I have been trying to figure out how I could incorporate them into a delicious gluten free snack. They are great on their own of course but sometimes you fancy being a little creative.
For Thanksgiving this year we spent the day at a friends house and what was sitting on the table when we arrived? A delicious snack involving persimmon. If you are looking for a delicious and gluten free appetiser with an autumn feel then these persimmon prosciutto bites are perfect. Gluten Free Thai Mango Curry

I incorporate pineapple into a lot of dishes and it’s always delicious so this time I thought I’d try mango instead. I’ve become a big fan of thai red curry since I discovered a number of different thai curry pastes which are gluten free. In the US I use Mae Ploy made from only a few vegetables and spices. Natural and delicious, personally I love using it in a variety of different dishes. It works perfectly with chunks of fresh mango to make a healthy, scrumdiddlyumptious meal! In the UK I use Thai Taste, very similar (but a bit less spicy) and equally tasty. (more…)

Something you probably already know about me if you’ve seen or tried any of my recipes on here is that I’m a big advocate of sticking whatever I have together to see how it turns out. My spinach and chickpea Wasabi Dijon Salad is another of these things. It’s super simple and it’s yummy.

Since Korea I’m all about the kimchi. It can add flavour and spice to so many different dishes. Earlier this week John was working late and I was craving sushi but I just wasn’t in the mood for discussions on ingredients and cross contamination. Kryptonite Curry
John and I do a lot of experimenting with meals. I don’t think we have ever followed a recipe. We are more the ‘try it out and see what happens’ type. We tend to buy a bunch of things that we like and then choose a selection that we think would work together, adding various spices here and there. This curry was one of those things and the reason I call it ‘Kryptonite Curry’ is probably pretty obvious. It’s very green! (more…)
Gluten Free Polenta Fries

I first got into polenta when we lived in Buenos Aires. Before this I’d never heard of it and as far as I know it’s not very popular in the UK. Gluten free breakfast cereal was nowhere to be found in Argentina so I had to make do with something else for my favourite meal of the day. When I came across polenta in the supermarket I wasn’t too sure what it was but when John told me that it’s basically cornmeal I figured I could prepare it with milk, fruit and cinnamon like a kind of porridge. It was delicious and I ate it almost every morning for breakfast, including at 4am on the day of my first marathon.
Recently I’ve been experimenting with more savoury dishes which involve polenta, one of these being delicious spicy sausage polenta. Last week I was pretty excited when John said he was making polenta fries topped with fried egg for dinner! (more…)
Gluten Free Beef Casserole
I enjoy cooking and experimenting with gluten free dishes and luckily for me so do most of my family and friends. I’m a big fan of simple dishes which can be prepared fairly quickly and without too many different ingredients which is why my gluten free recipes section is mostly filled with these types of easy and quick to prepare dishes. This recipe for Gluten Free Beef Casserole, which my sister-in-law cooked last weekend, is a little different. It involves a few more ingredients than I would normally use and takes a couple of hours to cook. It’s still simple to cook though and it’s so delicious and flavoursome that I couldn’t leave it out…

Gluten Free Toasted Coconut Chicken
Yesterday I was happy to receive this delicious sounding recipe from Jason, whose 4 year old son was diagnosed as celiac in October 2009. It’s lovely to hear from fellow gluten free families about the gluten free recipes they have concocted. This recipe for gluten free toasted coconut chicken sounds scrumdiddlyumptious to me and I can’t wait to give it a try!Anything which involves coconut and gluten free corn flakes is a recipe that gets me excited! Gluten Free Sweet Potato Chickpea Curry
I’m a huge fan of any meal which involves sweet potato and this is one of my favourite sweet potato recipes. Lots of veggies and spices make it a delicious and healthy meal and there is no gluten to be found! It’s also a dish where you can easily mix and match the veggies and pulses in this dish to ensure you get your favourites in there. Lentils or kidney beans would make a good alternative to chick peas!

- 1 large sweet potato
- Half a butternut squash
- 2 small onions
- Can of chickpeas
- Two cans of tomatoes
- Spinach
- 3 fresh chillies
- 6 cloves of garlic
