Black Bean Avocado Stir Fry

Full of tasty flavours!

As usual I was messing around with various flavours, spices and ingredients to see if I could come up with something tasty when I came up with my black bean avocado stir fry. Most days I like to eat a lunch involving lots of healthy and yummy veggies and I think this simple recipe works really well. It’s a little random as most of my recipes tend to be but it’s naturally gluten free, it’s super easy to make and it tastes pretty good too.

Ingredients

  • Olive oil
  • Red onion
  • Zucchini
  • Egg
  • Black beans
  • Lime
  • Chili flakes
  • Black pepper
  • GF soy sauce
  • Green beans
  • Avocado

How to make it

  • Slice and fry the red onion in a little olive oil
  • Add sliced zucchini to the pan
  • Put the veggies to the side of the pan and fry the egg in the remaining oil
  • Once fried chop up the egg and mix it in with the veggies
  • Add black beans to the pan
  • Sprinkle with chili flakes and black pepper
  • Squeeze in a lime and add a couple splashes of gluten free soy sauce
  • Simmer for a few minutes
  • Add fresh avocado to the mix and take off heat
  • Serve with boiled green beans and enjoy!
