There are a whole lot of tasty varieties of melon out there. Watermelon, Honeydew, Cantaloupe, Muskmelon, Galia, Korean Melon and lots of others which I’ve probably never even heard of. Melon is one of my favourite fruits and whilst I tend to travel with more ready to eat fruits such as apples or oranges, which don’t need to be chopped up, melon is definitely one of the first fruits I look for when I go to a market, no matter where in the world I am. I come across lots of different types of melon depending on the country  I’ve visiting and I haven’t yet come across one that I don’t love! My favourites are probably the seedless watermelon here in the US, cantaloupe and korean melon. Ok, enough of the melon rant.
This is more of a yummy snack or meal idea rather than a recipe as it only has three ingredients. I wanted to share it because it’s really tasty and healthy and gluten free and I can’t get enough of it! It’s one of my favourite gluten free snacks and I sometimes eat it  if I’m looking for a quick, light lunch. It’s especially great now that it’s melon season here in California.
Ingredients
- Natural yoghurt
- Melon (I think either honeydew or cantaloupe is best for this)
- Almonds
Almond butter as a substitute if you don’t have almonds works really well too. Just mix it into the yoghurt before adding in the melon!
Make sure the almonds you are using are safe from cross contamination. In the States I use Blue Diamond as almost all of their almonds are gluten free and made on gluten free lines.
