As usual I was messing around with various flavours, spices and ingredients to see if I could come up with something tasty when I came up with my black bean avocado stir fry. Most days I like to eat a lunch involving lots of healthy and yummy veggies and I think this simple recipe works really well. It’s a little random as most of my recipes tend to be but it’s naturally gluten free, it’s super easy to make and it tastes pretty good too.
Ingredients
- Olive oil
- Red onion
- Zucchini
- Egg
- Black beans
- Lime
- Chili flakes
- Black pepper
- GF soy sauce
- Green beans
- Avocado
How to make it
- Slice and fry the red onion in a little olive oil
- Add sliced zucchini to the pan
- Put the veggies to the side of the pan and fry the egg in the remaining oil
- Once fried chop up the egg and mix it in with the veggies
- Add black beans to the pan
- Sprinkle with chili flakes and black pepper
- Squeeze in a lime and add a couple splashes of gluten free soy sauce
- Simmer for a few minutes
- Add fresh avocado to the mix and take off heat
- Serve with boiled green beans and enjoy!
