Iceland is the first country other than the States that I travelled to since being diagnosed as coeliac which made this trip both very exciting and challenging in terms of finding safe, gluten free food. We spent five days travelling in Reykjavik in the winter of 2009. We didn’t catch a glimpse of the northern lights as we had hoped but we did find lots of great gluten free places to eat.
