I have been shying away from eating anything resembling a pork chop since my pretty serious and unpleasant choking incident at John’s parents house in Iowa last summer. This weekend however, when we came across some delicious looking pork chops in a market in Mt. Airy, John suggested he cook us something with them. He promised to cut the pork into very small, manageable chunks! 🙂 His honey pork with garlic potatoes was extremely garlicy and yummy!
Ingredients (serves 2)
- 2 medium potatoes
- 6 cloves of garlic
- 2 large (or 4 small) pork chops
- 3 tablespoons honey
- 3 heaped tablespoons natural yoghurt
- Cajun spices
How to make it
- Boil potatoes in pot until soft
- Drain potatoes and mash
- Add chopped garlic and a little milk
- Cut pork into small chunks and brown in pan
- Sprinkle with cajun spices
- When tender, mix in honey to cover pork
- Turn off heat and add natural yogurt to honey pork
