Gluten Free Chili Con Carne

Chili Con Carne is one of my favourites. I ate it probably as much as once a week growing up and as I got older and began meeting friends for pub lunches, chili was always my number one choice. When you order chili in the UK (spelled as chilli) it is commonly served with rice and this is the way I prefer to prepare and eat it. In the States, chili is served as more of a soup or stew and often with crackers.

Ingredients (serves 4)

  • 500g of ground beef
  • 250g of fresh tomatoes
  • Some tomato paste
  • Can of black beans
  • 2 peppers (different colours if possible)
  • 8 cloves of garlic
  • Half a large onion
  • Chili powder
  • Rice

How to make it

  • Empty 1 large cup of rice and 1.5 cups of water into a pot
  • Heat until boiling then take off heat
  • Cover and sit whilst preparing the chili
  • Chop up garlic and large onion and fry in large pan/griddle
  • Add ground beef and simmer for 10 mins or until browned
  • Add chili powder
  • Add fresh tomatoes and tomato paste whilst meat continues to simmer
  • Add more chili powder
  • Cut up 2 peppers and add to meat
  • Add more chili powder
  • Add can of black beans
  • Add more chili powder if you like it spicy!
  • Turn heat to low and simmer for 10 mins
  • Serve rice with chili and enjoy!
