I spent last weekend with a good friend I hadn’t seen in almost a year due to my gluten free travels. We decided to make dinner at her place and catch up over a glass of vino. We took a trip to the supermarket in order to buy gluten free ingredients to make something tasty. Neither of us had eaten fresh fish in a while so we decided on cod with brown rice. My friend had made an interesting garlic chilli sauce recently which included anchovies. Made with naturally gluten free ingredients and the perfect addition to a fishy dishy we bought the ingredients and gave it a go. The results were delicious!
Ingredients (serves 2)
- 3/4 cup of rice
- 2 pieces of fresh cod
- 3 cloves of garlic
- 2 chillis
- 3 shallots
- Small tin of anchovies
- Tub of cherry tomatoes/tomato paste
- Salad
How to make it
- Put 3/4 cup of rice and a cup of water into a pan
- Cook until boiling then take off heat, cover and leave to soften whilst preparing fish
- Use processor to mix or finely chop shallots, chillis, garlic, anchovies and tomatoes
- Heat sauce in pan with for 5 minutes
- Fry fish in pan with a little olive oil
- Serve fish and rice
- Serve sauce over fish
- Serve salad on the side and enjoy!
