Want to make some amazingly delicious and interesting gluten free pesto? If you have a food processor then try this! We made it this weekend and it was fantastic. I love regular pesto but I may like this one even more and it’s definitely an interesting alternative. I also adore almonds and cilantro so this was a delicious and fun way to get them both in the same dish.
Ingredients
- Almonds – 1/4 cup / 30-35 almonds
- Cilantro – One bunch
- Olive oil – Couple of glugs
- Red onion – Medium
If you like your pesto with a little spice add some serrano pepper!
TIP: Ensure the almonds you are using are safe from cross contamination.
Some fun and simple recipe ideas for your pesto are to fry up some tofu with garlic, pour the pesto over and serve with green beans. Another idea is to mix up the pesto with cottage cheese and serve it with gluten free rice pasta and green peppers. Most recently we made delicious gluten free pesto sandwiches. We grilled eggplant topped with onions and a little olive oil, used the pesto to butter our bread and used the eggplant as a yummy veggie filling!

Jul 5th, 2012This pesto looks great! Cilantro is one of my favorite herbs, and almonds are much more affordable than pine nuts. I like my pesto slathered on GF crostini with fresh tomatoes, or as a topping for grilled chicken.
