Gluten Free Mexican Chicken Stew

Last week another good friend made me dinner. Oh to be home, visiting friends and trying lots of new gluten free delights! She made me a dish that she frequently makes and which happens to be naturally gluten free. I’m a huge fan of eating meals that do not require altering and substituting of ingredients in order to make it safe for me. This Mexican Chicken Stew is one of these things. Naturally gluten free and completely delicious!

Tasty Mexican Chicken Stew

Ingredients (Serves 4)

  • 4 chicken breasts
  • 5 cloves of garlic
  • I finely chopped chipotle pepper
  • Coriander leaves
  • Teaspoon of dark brown sugar
  • Can of chopped tomatoes
  • One medium onion
  • One small red onion

How to make it

  • Place sliced onion, garlic and can of tomatoes into medium frying pan and simmer for 5 minutes
  • Add sugar and finely chopped chipotle pepper and mix into sauce
  • Place chicken breasts into pan, cover with sauce and simmer for 30 mins
  • Remove now cooked chicken from pan, shred with fork and return to sauce
  • Add circles of red onion and continue to simmer for 10 mins
  • Sprinkle with coriander leaves
  • Serve with rice and enjoy!

  • I really like simple recipes that are quick and easy to make. This one is definitely that and yet has lots of flavor. I also don’t use coriander very much, so looking forward to giving this one a go.
