Cooking with peanut butter

Cooking with peanut butter is a great idea! I’ve always liked peanut butter but since moving to the States I’ve become even more addictive to it’s delicious creamy flavour! I love peanut butter straight from the jar as a snack or mixed in with my hot breakfast cereal in the morning but this was the first time I tried cooking with it. The results were delightfully delicious!

Ingredients

  • Red onion
  • Garlic
  • Shrimp
  • Yellow or orange pepper
  • Spicy peanut butter (I’ve been using Peanut Butter & Co’s The Heat Is On but if you can’t find spicy peanut butter try adding chili powder and cayenne pepper to smooth peanut butter)
  • Splash of almond milk
  • Large fresh tomato
  • Serve on salad and enjoy!

How to make it

  • Fry up some garlic and red onion in a pot
  • Add fresh shrimp
  • Add a sliced up pepper
  • Mix in a big spoonful of spicy peanut butter
  • Add a couple of splashes of almond milk (unsweetened)
  • Throw in a fresh, chopped up tomato
  • Serve on salad and enjoy!
 This dish also tastes great using tofu and chicken if you’re not a big fan of shrimp.

Just tried a restaurant you had recommended in Asheville NC that is totally Gluten Free, Poscana– I loved it!!! We took extra desserts home!! My son, who does not have gluten problems loved the restaurant as well! Thank you!!
