Gluten Free Thai Green Coconut Curry

I don’t find myself eating much Thai food for some reason. I’m not sure why this is because any time I do eat it, it’s fantastic! Many Thai dishes also tend to be naturally gluten free. After this successful attempt at gluten free Thai curry, perhaps I’ll be more inclined to choose Thai eateries and experiment more with Thai cuisine.

Thai Green Curry Paste



 Ingredients (Serves 3)

  • 3 turkey breasts
  • 60 grams Thai green curry paste
  • 1 red pepper
  • 1 onion
  • 10 mushrooms
  • splash of milk
  • olive oil
  • 40 grams desiccated coconut
  • 300 grams fresh rice noodles

How to make it

  • Slice onion and fry in a little olive oil
  • Chop turkey into medium chunks, add to onions and simmer for 5 mins
  • Add sliced mushrooms and pepper
  • Stir in curry paste and a couple of splashes of milk
  • Sprinkle with coconut and stir for a couple of minutes
  • Leave to simmer for 10 minutes
  • Serve with rice noodles and enjoy!
