Tofu Black bean Chilli

A light and flavoursome meal

 

I like to eat meat sometimes but recently I’ve been experimenting with vegetarian dishes. Tofu is an ingredient I’ve been using a lot. It works well as a meat substitute in a variety of dishes, it’s high in protein and calcium and since it doesn’t have a strong flavour itself it absorbs flavour and spices really well to make very tasty, flavoursome meals. Of course most importantly of all, it’s gluten free! Chilli beef is one of my all time favourite dishes of all time so I decided to give a tofu version a try. I really enjoyed this tofu black bean chilli. It was a lighter meal and it had a lot of flavour to it.

Ingredients (Serves 2)

  • Gluten free soy sauce
  • Tofu – chopped into chunks
  • Chilli Powder
  • Garlic (4 -5 cloves)
  • Onion – chopped
  • Pepper – chopped
  • Black Beans
  • Tomato paste

How to make it

  • In a non stick pan, brown tofu in a little soy sauce
  • Stir in chilli powder
  • Add garlic, onion and pepper
  • Add black beans to mix and simmer for 10 mins
  • Stir in tomato paste and more chilli powder to taste
  • Serve with your favourite grain or salad and enjoy!
