Today I made a really tasty gluten free lunch. As usual I took a look in the fridge to decide what I wanted to eat for lunch. As usual I threw together a few things that I thought would work well. I always enjoy my lunch but today’s lunch turned out even better than usual. I wanted to share it with you as it’s super simple, really tasty and 100% gluten free! I’m not sure it’s really an omelette but there are eggs involved! I used our home-made gluten free pesto recipe to give it lots of flavour!
Ingredients
- Olive oil
- Medium onion (any colour)
- Large summer squash
- 2 eggs
- Handful of green beans
- Small pepper
- Black pepper
- Chilli flakes
- Pesto
- Natural yoghurt
How to make it
- Fry the onion in a little olive oil
- Add sliced squash to the pan
- Put veggies to the side of the pan and fry eggs in the middle
- Add green beans and pepper and lower heat
- Sprinkle with black pepper and chilli flakes
- Mix in a couple tablespoons of pesto
- Take off heat
- Add a couple tablespoons of natural yoghurt and mix in
- Serve and enjoy!
