I enjoy cooking and experimenting with gluten free dishes and luckily for me so do most of my family and friends. I’m a big fan of simple dishes which can be prepared fairly quickly and without too many different ingredients which is why my gluten free recipes section is mostly filled with these types of easy and quick to prepare dishes. This recipe for Gluten Free Beef Casserole, which my sister-in-law cooked last weekend, is a little different. It involves a few more ingredients than I would normally use and takes a couple of hours to cook. It’s still simple to cook though and it’s so delicious and flavoursome that I couldn’t leave it out…
Ingredients (Serves 5-6 hungry people!)
- 2 tablespoons olive oil
- 2 onions, finely chopped
- 200g mushrooms, sliced
- 4 cloves garlic, crushed
- 800g diced lean beef
- 2 tablespoons corn flour
- Tin of chopped tomatoes
- 1 cup red wine
- 1 cup gluten free stock
- Red pepper, sliced
- 1 tablespoon chopped parsley
- 1 tablespoon chopped oregano
How to make it
- Preheat oven to 170c (340F)
- Heat 2 teaspoons of oil in frying pan with onion, mushrooms, garlic. Saute for 5 mins or until soft
- Transfer to large, oven proof  dish
- Toss meat in lightly seasoned corn flour
- Heat remaining oil in frying pan and cook beef until well browned
- Transfer meat to onion and mushroom mix
- Add tomato, wine, stock and pepper to pan and bring to boil
- Add everything to oven proof dish
- Cover and heat in the oven for 2 hours or until meat is tender
- Stir in herbs and season to taste
- Serve with rice or mashed potatoes and enjoy!
