Simple Recipes

We don’t always have the time or resources to stand in the kitchen for hours preparing a meal. Sometimes we get home from a long day and we want to eat right now. I like to cook simple, interesting and tasty meals and I’d like to share some of them here. All of these recipes can be prepared either at home or whilst travelling and with only a small number of easy to find ingredients. Most of them are at least to some extent inspired by tasty dishes I’ve come across on my travels. Often when I’m cooking I’m looking for ideas. Hopefully some of my simple recipes will inspire you to either try these or try something similar. Sizzling away

Recently I’ve fallen in love with asparagus spears. It’s not a vegetable I’ve cooked with much in the past but I bought a couple of bunches recently on a kick I was having to try new things and now I can’t get enough. In reading about it’s nutritional value I see that asparagus is a very good source of dietary fiber, potassium and maganese amongst other vitamins and minerals. Kimchi beef stirfry

Almost ready...

As you’ll know if you’ve looked at any of my other recipes I’m a bit of a kimchi fan. Ever since South Korea I can’t seem to get enough of it. At first I thought ‘Really? Fermented cabbage? but then I got pretty addicted. It’s spicy, it adds a lot of flavour to dishes and it tastes great. Of all meats I think kimchi tastes best with beef. I ate a lot of kimchi with bulgogi in Korea. Maybe that’s why. (more…)

Start with avocado & spinach

Burritos were one of my favourite foods before being diagnosed as celiac. Munching on a bunch of  rice, beans, avocado, salsa, salad and cheese all wrapped in something that didn’t fall apart on me… oh those were the days. I eat a lot of corn tortillas nowadays but I can never find large ones and I find that even when only filled with a few things, they tend to fall apart on me. Recently I found some brown rice tortillas in Whole Foods. They are gluten free, they are large and whilst not as sturdy as wheat tortillas so far they don’t seem to fall apart as easily as corn tortillas do. For this recipe I topped the tortilla with too many things that it ended up being an eat with your hands sort of a meal (which I love!) but with half the toppings this would have worked well wrapped up as a burrito. Gluten Free Garlic Mustard Tofu

Earlier this week John and I decided to experiment with a tasty garlic, habanero mustard I picked up in Gilroy, CA, the garlic capital of the world. It’s basically a spicy, garlic mustard and it’s really tasty. We thought it would work well with a tofu dish and we were right. As this particular mustard is probably going to be pretty hard to get your hands on any strong mustard ( as long as it’s gluten free) will work with this recipe. I would however recommend adding a few cloves of fresh garlic (or even more if you just love your garlic!) to the mix if your mustard doesn’t already contain it. (more…)

Creamy pumpkin rice pudding

We spent Thanksgiving this year at a friend’s house. It was a fun and relaxing day. The best part was the amazing gluten free rice pudding that Kelly made for us. It was sweet and creamy and the pumpkin gave it the perfect festive touch! I plan to steal her recipe and make lots of this stuff for my family over the Christmas period. For an alternative, substitute pumpkin for sweet potato! (more…)

Persimmon Prosciutto Bites

I’m a big fan of persimmons. I first discovered them whilst living in South Korea. They were everywhere and I loved their crunchy, sweet taste.  Ever since I have been trying to figure out how I could incorporate them into a delicious gluten free snack. They are great on their own of course but sometimes you fancy being a little creative.

For Thanksgiving this year we spent the day at a friends house and what was sitting on the table when we arrived? A delicious snack involving persimmon. If you are looking for a delicious and gluten free appetiser with an autumn feel then these persimmon prosciutto bites are perfect. Thai mango curry

I incorporate pineapple into a lot of dishes and it’s always delicious so this time I thought I’d try mango instead. I’ve become a big fan of thai red curry since I discovered a number of different thai curry pastes which are gluten free. In the US I use Mae Ploy, made from only a few vegetables and spices. Natural and delicious, personally I love using it in a variety of different dishes. It works perfectly with chunks of fresh mango to make a healthy, scrumdiddlyumptious meal! (more…)

Since Korea I’m all about the kimchi. It can add flavour and spice to so many different dishes. Earlier this week John was working late and I was craving sushi but I just wasn’t in the mood for discussions on ingredients and cross contamination.
