Amaranth, Gluten Free
Amaranth is an exciting gluten free grain that I had been hearing about for a while but only very recently did I manage to get my hands on some. Since posting on Twitter and my Facebook page about this new discovery I’ve had a lot of questions. It appears that many of us in the gluten free community have heard of this mystery food but not many of us have tried it. Gluten Free Tofu Black Bean Chilli
I like to eat meat sometimes but recently I’ve been experimenting with vegetarian dishes. Tofu is an ingredient I’ve been using a lot. It works well as a meat substitute in a variety of dishes, it’s high in protein and calcium and since it doesn’t have a strong flavour itself it absorbs flavour and spices really well to make very tasty, flavoursome meals. Of course most importantly of all, it’s gluten free! Chilli beef is one of my all time favourite dishes of all time so I decided to give a tofu version a try. I really enjoyed this tofu black bean chilli. It was a lighter meal and it had a lot of flavour to it. (more…)

Recently I’ve fallen in love with asparagus spears. It’s not a vegetable I’ve cooked with much in the past but I bought a couple of bunches recently on a kick I was having to try new things and now I can’t get enough. In reading about it’s nutritional value I see that asparagus is a very good source of dietary fiber, potassium and maganese amongst other vitamins and minerals. As you’ll know if you’ve looked at any of my other recipes I’m a bit of a kimchi fan. Ever since South Korea I can’t seem to get enough of it. At first I thought ‘Really? Fermented cabbage? but then I got pretty addicted. It’s spicy, it adds a lot of flavour to dishes and it tastes great. Of all meats I think kimchi tastes best with beef. I ate a lot of kimchi with bulgogi in Korea. Maybe that’s why. (more…)

Start with avocado & spinach
Burritos were one of my favourite foods before being diagnosed as celiac. Munching on a bunch of rice, beans, avocado, salsa, salad and cheese all wrapped in something that didn’t fall apart on me… oh those were the days. I eat a lot of corn tortillas nowadays but I can never find large ones and I find that even when only filled with a few things, they tend to fall apart on me. Recently I found some brown rice tortillas in Whole Foods. They are gluten free, they are large and whilst not as sturdy as wheat tortillas so far they don’t seem to fall apart as easily as corn tortillas do. For this recipe I topped the tortilla with too many things that it ended up being an eat with your hands sort of a meal (which I love!) but with half the toppings this would have worked well wrapped up as a burrito. Gluten Free Garlic Mustard Tofu

Earlier this week John and I decided to experiment with a tasty garlic, habanero mustard I picked up in Gilroy, CA, the garlic capital of the world. It’s basically a spicy, garlic mustard and it’s really tasty. We thought it would work well with a tofu dish and we were right. As this particular mustard is probably going to be pretty hard to get your hands on any strong mustard ( as long as it’s gluten free) will work with this recipe. I would however recommend adding a few cloves of fresh garlic (or even more if you just love your garlic!) to the mix if your mustard doesn’t already contain it. (more…)
