Could quinoa be unsuitable for some celiacs? Some folks think, possibly.

I keep hearing about this quinoa possibly not being safe for celiacs malarky. There don’t seem to be any concrete findings on this issue as yet but I decided I was too intrigued by the possibility of quinoa being another dodgy grain for celiacs not to ask for your thoughts.

I’m not normally one for New Year’s Resolutions but as a year comes to an end I do like to look back at the year that’s coming to a close and think about what I would like to be different in the upcoming year. Sweet potato goodness!

Some of you asked for my sweet potato based, gluten free pizza recipe so here it is! It’s super simple, it’s insanely delicious and it’s a wee bit different from your tomato based pizzas. If you haven’t yet tried pizza topped with creamy sweet potato I would definitely recommend giving it a try. It’s pretty amazing. Genetically Modified Gluten Free Wheat?

Right now bread made from gluten-free wheat may sound like something from a science-fiction novel but scientists say that it’s a real possibility.

Scientists from Washington State University are experimenting by looking for varieties of wheat and barley that lack, or at least make a lot less of, key gluten proteins in their grains. Gluten is a mix of proteins stored in seeds of wheat, barley and rye and only some of these proteins trigger the allergic reactions in celiac and gluten intolerant patients. So what if these deadly proteins could be removed? Would the wheat then be safe for celiacs to eat?

Next month John and I are headed to Singapore, Malaysia, and Indonesia. This will be my first visit to all of these places so this week I started doing some research into what kind of gluten free food, if any, I can expect to find there. I got pretty excited when I came across a pizza place in Singapore which does gluten free pizza.

Me (with a huge grin on my face): Woohoo! I found gluten free pizza in Singapore!!!

Simple Gluten Free Chex Mix

Lots of gluten free Chex!

I love Chex and I love home-made gluten free Chex mix. I’m not sure why the Chex mix you can buy in stores doesn’t have a gluten free variety yet since six of the eight flavours of the cereal are gluten free but sooner or later it’s bound to happen. For now though we celiacs can quite easily make our own. For our wedding John and I made a huge batch for our guests to munch on and it was quite the hit. Just mix everything together in a big bowl and enjoy!

I like the idea of adding peanut or almond butter to one of these mixes, and some of the ideas on the back of the cereal packets call for it, but at the same time I’m not sure I want messy fingers whilst I’m eating it. For now at least, I’m keeping to a less messy Chex mix. 🙂

Looking After A Child With Type 1 Diabetes

My beautiful niece, MacKenzie

Today I wanted to raise awareness of type 1 diabetes, another terrible autoimmune disorder which will hopefully one day have a cure. There is a clear genetic link between celiac disease and type 1 diabetes and around 10% of people with type 1 will go on to develop celiac disease.

World Diabetes Day is November 14th. To raise awareness my sister-in-law recorded her daily routine of looking after her baby girl, MacKenzie, who was diagnosed with type 1 diabetes at just 15 months old. This isn’t an annual, monthly or even weekly routine; this is the every day reality of looking after a diabetic child. MacKenzie is two years old.

Pizza is amazing. Who doesn’t love pizza? Unfortunately for gluten free folks, eating safely at pizza restaurants can be a challenge with so much flour flying around. For a cuisine filled with gluten containing dishes, Italian restaurants are some of the best at catering for gluten free customers.
