Gluten Free Rice Krispies

Since my gluten free life began, not having the wide choice of breakfast cereals like I used to has been the most difficult thing for me. At first I thought being coeliac meant I could never eat cereal again but thankfully I quickly found out this was not the case. I couldn’t have the cereals I was used to and I no longer had the variety to choose from but there were some nice companies out there who made special cereals just for me! Discovering new gluten free cereals has been great whether they are naturally gluten free or specifically made. I was extremely excited to discover that CHEX in the States were made and re-branded as gluten free.

Gluten Free Sweet Potato Chickpea Curry

I’m a huge fan of any meal which involves sweet potato and this is one of my favourite sweet potato recipes. Lots of veggies and spices make it a delicious and healthy meal and there is no gluten to be found! It’s also a dish where you can easily mix and match the veggies and pulses in this dish to ensure you get your favourites in there. Lentils or kidney beans would make a good alternative to chick peas!

How Gluten Free Trusting Are You?

I trust John 100% when it comes to him cooking us a gluten free meal. He has been with me on my gluten free journey from day one and he is as thorough as me when it comes to checking and cleaning. My heart tingles with love when I hear him asking someone if he can give their chopping board an extra clean 🙂 With anyone new to gluten free cooking I’m a little wary but I’m starting to put my trust (and my healthy villi) in the hands of my cautious parents and closer friends. My level of gluten free trust depends on who is cooking for me, what they are cooking and where they are cooking it.

Gluten Free Thai Green Coconut Curry

I don’t find myself eating much Thai food for some reason. I’m not sure why this is because any time I do eat it, it’s fantastic! Many Thai dishes also tend to be naturally gluten free. After this successful attempt at gluten free Thai curry, perhaps I’ll be more inclined to choose Thai eateries and experiment more with Thai cuisine.

Gluten Free Fish and Chips

Last Saturday my brother took us out for dinner. We went to The Thorn Tree Inn (George’s) pub and restaurant in Codnor, Derbyshire. Mark and his wife had eaten there on a number of occasions and really enjoyed the food. A high percentage of the dishes on the menu are fish so they figured a large number of them would likely be gluten free. I called the restaurant in advance to ask whether they did any gluten free options and was told they normally have at least a couple. We decided to head out there and give it a try..

Gluten Free Honey Mustard Chicken

I spent last weekend with my brother, sister-in-law and beautiful baby niece. My lovely sister-in-law is very gluten free aware and understands the threat of cross contamination. When she made us this delicious gluten free honey and mustard chicken she double checked each ingredient with me to ensure they were safe. She even bought a brand new pot of mustard in case their open one had been contaminated by something glutenous. Your caution and delicious cooking was very much appreciated, Anita! 🙂

Gluten Free Mexican Chicken Stew

Last week another good friend made me dinner. Oh to be home, visiting friends and trying lots of new gluten free delights! She made me a dish that she frequently makes and which happens to be naturally gluten free. I’m a huge fan of eating meals that do not require altering and substituting of ingredients in order to make it safe for me. This Mexican Chicken Stew is one of these things. Naturally gluten free and completely delicious!

Are You 100% Gluten Free?

A few days ago I was speaking to my friend who happens to have another friend with coeliac disease. Whilst we were cooking dinner together she noticed how careful I was being and how much attention I was paying to everything. I scrubbed every pot, pan, knife and spoon before we used them and checked the labels of each and every ingredient we were cooking with. All of this is normal practice for me.
