I’m a huge pesto fan. It’s naturally gluten free, simple to make and full of flavour – what’s not to love! I’m a pretty big fan of sandwiches too, when they’re gluten free of course, so what better than a tasty gluten free pesto and chicken sandwich for lunch or dinner. When making pesto we tend to use this super simple recipe. We alternate between using cilantro or basil but we always use almonds in place of pine nuts. The past few times we have made these sandwiches we have used bread from Mariposa Bakery here in San Francisco. If you can get your hands on some, fresh gluten free bread (baguette style) is the best for this type of sandwich!
GLUTENED! How long before you feel better?
No matter how hard we try, we all find ourselves accidentally glutened every now and again. The symptoms are different for each of us, as are what we do to make ourselves feel better as fast as possible.
My question here is, when you are accidentally contaminated by gluten how long does it normally take you to get over it? To feel better? To feel like yourself again? How long does it take to feel better after eating gluten?
More Gluten Free Than Ever Before
A few months ago I was still suffering from occasional celiac symptoms. I still felt as though I was being glutened on occasion. Nothing too obvious and not too often but it was happening from time to time and I was feeling like crap any time it did. I had brain fog coming and going, often for weeks at a time, and lingering gastro symptoms. More recently though all of these nasty things seem to have left me alone. I don’t want to tempt fate by saying that everything is great and it’s always going to be from now on but over the past few months I’ve felt really good, really healthy and really free from gluten! I decided to write this post to share with you some of the things I have actively done, diet wise, which have made these lingering things go away, hopefully forever!
Gluten Free Life – 3 Years On
This week marks my three year anniversary! It’s gluten free cake time! Three years ago this week my doctor told me I had something called celiac disease. Three years ago this week I found out I could never again eat gluten. Three years ago this week I went from Laura, the Scottish chick who travels a lot to Laura, the gluten free traveller.
It’s interesting to look back at the post I wrote two years back when I was just one year into my gluten free journey. I feel so much more knowledgeable and comfortable about gluten free living than I did back then. These past two years have been a huge learning experience. I wasn’t even on Twitter or Facebook back then. 🙂
Yoghurt Pesto Omelette
Today I made a really tasty gluten free lunch. As usual I took a look in the fridge to decide what I wanted to eat for lunch. As usual I threw together a few things that I thought would work well. I always enjoy my lunch but today’s lunch turned out even better than usual. I wanted to share it with you as it’s super simple, really tasty and 100% gluten free! I’m not sure it’s really an omelette but there are eggs involved! I used our home-made gluten free pesto recipe to give it lots of flavour!
How To Prevent Cross Contamination Eating Out
Eating Out when you are on a strict gluten free diet is definitely a challenge. Finding a restaurant with gluten free options is just the first hurdle. The most difficult part is finding a restaurant where they understand the serious threat of cross contamination and know how to prevent it.
Here are some of the things I do to avoid cross contamination when eating out. Please share your tips and ideas too. Since this topic is such a large and important one I decided to divide it into three sections. How to prevent cross contamination when cooking at home, eating out and travelling.
Black Bean Avocado Stir Fry
As usual I was messing around with various flavours, spices and ingredients to see if I could come up with something tasty when I came up with my black bean avocado stir fry. Most days I like to eat a lunch involving lots of healthy and yummy veggies and I think this simple recipe works really well. It’s a little random as most of my recipes tend to be but it’s naturally gluten free, it’s super easy to make and it tastes pretty good too.
Almond Melon Yoghurt
There are a whole lot of tasty varieties of melon out there. Watermelon, Honeydew, Cantaloupe, Muskmelon, Galia, Korean Melon and lots of others which I’ve probably never even heard of. Melon is one of my favourite fruits and whilst I tend to travel with more ready to eat fruits such as apples or oranges, which don’t need to be chopped up, melon is definitely one of the first fruits I look for when I go to a market, no matter where in the world I am. I come across lots of different types of melon depending on the country  I’ve visiting and I haven’t yet come across one that I don’t love! My favourites are probably the seedless watermelon here in the US, cantaloupe and korean melon. Ok, enough of the melon rant.
