Delicious and filling dosas

Last week I was invited by the owner of Philly Chutney Company to sample some of the restaurant’s gluten free dishes. Approximately 60% of the dishes on their current menu are gluten free but they were looking for my advice on how they could make some changes to ingredients/cooking procedures in an effort to make more dishes suitable and safe for celiacs. Non gluten free items are pretty obvious. Their wraps are wheat wraps but the plan is to offer corn or rice wraps for gluten free customers. In the near future, they hope to label gluten free dishes as so in order that celiacs can come and feel comfortable ordering dishes. Dishes made of entirely gluten free ingredients and where cross contamination is not an issue.

Gluten Free Traffic Light Rice

Since being diagnosed as coeliac, rice has been my gluten free best friend! Thankfully, I was always much more of a rice girl in pre-coeliac days anyway so using rice in a large percentage of my meals feels normal to me.

Bibimbap, a Korean rice dish which literally means ‘mixed meal’ was one of my favourites when I lived in Seoul and is the inspiration for many mixed meals that I make these days. Simple, gluten free and as colourful as possible is the way to go. If kimchi is involved, even better!

Gluten Free Egg and Black Bean Tortillas

In 2007 I spent 4 months in Central America, mainly Mexico and Guatemala, and this is where I fell in love with corn tortillas. Almost every day in Mexico I ate street tacos which are small corn tortillas with beef, onions and cilantro (coriander) bought from and eaten at a cart. They were so simple, flavoursome and delicious that I couldn’t get enough. They were also insanely cheap. This love affair with Mexican street tacos was two years before my life became gluten free so who could have known that corn tortillas would go on to save me on many gluten free dining occasions.

Cajun shrimp Jambalaya

The Super Bowl is a pretty big event in the US. To be honest I’m not a huge fan of American football. No, actually, I think it’s possibly the dullest sport ever but what I do enjoy is the food culture that goes with this huge sporting day! There are ridiculous amounts of food being eating during the Super Bowl and our Philadelphia feast was to be 100% gluten free.

Gluten Free Pancakes

Last weekend John made me gluten free pancakes. I like pancakes but they are not something I find myself eating very often. This is probably because pancakes tend to be more of a breakfast food and being a cereal monster myself, this doesn’t leave much room for what could perhaps result in more interesting breakfast options. The reason for Sunday’s pancake breakfast is a slightly spooky one. On moving into our new apartment in Philadelphia, the shelves were empty but for a couple of miscellaneous things. One of these things was pancake mix, but not just any pancake mix…Gluten free pancake mix! What are the odds!?!

These were my first gluten free pancakes and they were delicious! My non gluten free house mates also really enjoyed them and had no idea they were gluten free. At some point I may try making them from scratch but with mix like this, I’m in no hurry…

Gluten Free Spicy Sausage Polenta

I first started eating polenta in Argentina, basically because it was ridiculously cheap ($0.50 for 1kg), the bag said it could be prepared in one minute and as there was no gluten free breakfast cereal to be found this was the next best thing. I cooked it almost every morning with cinnamon and fruit like a porridge. Although my enjoyment of polenta began at breakfast, it has grown with my discovery that it could be used as a tasty addition to various gluten free meals at any time of the day.

Gluten Free Sweet Potato Kimchi Pizza

The inspiration for my sweet potato and kimchi pizza comes from my year living and working in South Korea as an English teacher. This was in 2006, 3 years before the term gluten free ever crossed my lips. South Korea is magical. I boarded a plane in Manchester, England and disembarked in a completely unknown land filled with colour, excitement and culture. It’s just over five years ago now that I stepped off the bus in Guri-si and was welcomed to my new home. At that time I had no idea the part this year would play in my life but sitting here today I can’t imagine life without my memories of Seoul and the rest of this beautiful country. I met amazing friends, discovered my love for Noribang (Korean Karaoke) and ate some of the most delicious food of my life. mmm kimchi! It was also here where I met my lovely travelling companion and boyfriend John. Many Korean foods are gluten free. One day I will return on my gluten free travels to find out just how many. For now though, I’m making my own South Korean inspired gluten free dishes…
