My gluten free bib 🙂

Last weekend I ran the San Francisco Half Marathon. There were more hills than I was expecting (Yes, I know we’re in SF but a runner can hope can’t she) but it was a great race and I didn’t stop for a second. The 13.1 mile course covered some amazing views and I got to run over the Golden Gate Bridge which was amazing!

Free..and Gluten Free!

SF Marathon Expo

Last Friday I went to the San Francisco Marathon Expo to pick up my bib number and running shirt for the half marathon. I also went to check out what they had to offer in terms of energy filled samples in the hopes that there would be something gluten free for me to nibble. I was very impressed. There were lots of gluten free goodies…

Pure Fit Protein Bar

A couple of weeks back I received another box of protein bars to sample. I’ve never eaten so many different protein bars in my life! This time it was Pure Fit protein bars. Five different flavours. Granola Crunch,  Chocolate Brownie, Almond Crunch, Peanut Butter Crunch and Berry Almond Crunch. I was impressed primarily by the fact that all of their bars are gluten free and not only a selection. This is not the norm but it’s something I’m very happy to see as it takes away contamination worries. All of these bars are gluten free, wheat free, dairy free, vegan and kosher…That’s a lot of things but the question is do they taste good?

Gluten Free Honeymoon Iowa to California

Walking salad

The best leftovers ever!!

After our wedding we decided to rent a car in Iowa City and drive back home to San Francisco through the Badlands, Yellowstone Park, Oregon and everywhere else in between. We gave ourselves a week to drive what added up to 3060 miles. It was a beautiful drive and we had a lot of fun even if John did promise me that we’d see a lot of buffalo and we only ended up seeing 3 or 4!

Tasty and healthy summer salad

Something you probably already know about me if you’ve seen or tried any of my recipes on here is that I’m a big advocate of sticking whatever I have together to see how it turns out. My spinach and chickpea Wasabi Dijon Salad is another of these things. It’s super simple and it’s yummy.

John's Grocery, Iowa City

Amazing lasagna by post

Our wedding is taking place in John’s parent’s yard and we plan to serve a buffet style linner. As we had only a month to plan everything, we assumed that finding a local place which does gluten free catering would be a problem. I’ve never had to deal with any sort of catering in the past but finding a place in south eastern Iowa to not only make gluten free food for us but to make it safely and cross contamination free didn’t sound like the simplest task!

Spicy Shrimp Kimchi Stir Fry

Sizzling shrimp & kimchi

Since Korea I’m all about the kimchi. It can add flavour and spice to so many different dishes. Earlier this week John was working late and I was craving sushi but I just wasn’t in the mood for discussions on ingredients and cross contamination. I decided to pick up some shrimp from the grocery store and make myself something fishy and spicy at home instead.

Kryptonite Beef Curry

Kryptonite Curry

John and I do a lot of experimenting with meals. I don’t think we have ever followed a recipe. We are more the ‘try it out and see what happens’ type. We tend to buy a bunch of things that we like and then choose a selection that we think would work together, adding various spices here and there. This curry was one of those things and the reason I call it ‘Kryptonite Curry’ is probably pretty obvious. It’s very green!
