I spent last weekend with a good friend I hadn’t seen in almost a year due to my gluten free travels. We decided to make dinner at her place and catch up over a glass of vino. We took a trip to the supermarket in order to buy gluten free ingredients to make something tasty. Neither of us had eaten fresh fish in a while so we decided on cod with brown rice. My friend had made an interesting garlic chilli sauce recently which included anchovies. Made with naturally gluten free ingredients and the perfect addition to a fishy dishy we bought the ingredients and gave it a go. The results were delicious!

Gluten Free Fajitas

Fajitas are tasty and most of the ingredients tend to be naturally gluten free so what a perfect meal for celiacs. Most people (in the UK at least) use wheat tortillas to eat with their fajitas but if you substitute these for corn tortillas and double check that all of the ingredients you are using are gluten free, you’ve got yourself a delicious, filling meal!

Finding corn tortillas in the US is simple. They are everywhere and they are super cheap. Finding them in the UK on the other hand is not so simple. If you look at ‘corn tortillas’ you find in our supermarkets the first or second ingredient is wheat flour! Crazy, right? The only real corn tortillas I’ve managed to find in the Glasgow area were at Lupe Pintos on Great Western Road in the West End, a store which sells various American, Mexican and Spanish products. They aren’t cheap at around £2.50 for 12 but so far I’ve found nowhere else to buy them! If you use tortillas, let me know where you buy them please…

I have been shying away from eating anything resembling a pork chop since my pretty serious and unpleasant choking incident at John’s parents house in Iowa last summer. This weekend however, when we came across some delicious looking pork chops in a market in Mt. Airy, John suggested he cook us something with them. He promised to cut the pork into very small, manageable chunks! 🙂 His honey pork with garlic potatoes was extremely garlicy and yummy!

Gluten Free Chili Con Carne

Chili Con Carne is one of my favourites. I ate it probably as much as once a week growing up and as I got older and began meeting friends for pub lunches, chili was always my number one choice. When you order chili in the UK (spelled as chilli) it is commonly served with rice and this is the way I prefer to prepare and eat it. In the States, chili is served as more of a soup or stew and often with crackers.

Gluten Free Candy Sushi

My two favourite foods are cereal and sushi so I thought to myself, why not combine the two and make delicious candy sushi. Before being diagnosed as coeliac I was a huge fan of making rice krispie cakes with either marshmallow or chocolate and I felt the desire to see if I could make even more delicious ones that were not only gluten free but in the shape of nigiri and maki sushi. Get creative with whatever fishy candy shapes you can get your hands on!

Gluten Free Cajun Spaghetti Bolognese

I don’t eat a lot of pasta these days for 3 reasons. One, gluten free pasta tends to be pretty expensive, two, it always seems to turn out a bit squishy when I cook it and three, I’d almost always choose rice over pasta anyway. Every so often though, I feel like a change and when I spotted an interesting sounding gluten free spaghetti by De Boles (made with rice, quinoa and amaranth) in Whole Foods recently, I thought I’d give gluten free spaghetti bolognese a try!
