On my latest trip to New York City I stayed in a cute little apartment in the Lower East Side. I found so many gluten free restaurants on my last trip to the city that I wasn’t sure there were more left to discover but I’m happy to report that I found some exciting new places on this trip too! New York city is an amazing place to be when you are gluten free because there are so many options to choose from!
Spaghetti Squash Recipe
Spaghetti squash is my new favourite vegetable. It’s amazing. We cooked it for the first time last week and it was a delicious success! Spaghetti squash has lots of great things going for it. You can bake it, boil it, steam it or even microwave it, it contains lots of great nutrients and it’s very low in calories. Oh and most importantly it’s naturally gluten free.
When it’s raw it’s hard like any other squash but once you cook it the flesh comes out just like spaghetti! I had heard spaghetti squash was a great substitute for pasta but I didn’t truly believe it until I saw it for myself. Amazing!
20 Healthy Gluten Free Snacks
What are your favourite healthy gluten free snacks? There are a lot of posts out there which talk about the latest gluten free chips, cookies, muffins, candy or chocolate but sometimes celiacs want and need healthy gluten free snacks to nibble.
So what do you snack on when you are feeling in a healthy mood? These are some of my favourites. All of these are naturally gluten free snacks but double check there are no cross contamination issues.

Pretty soon I will be turning 30. I know, I can’t believe it either. 😉
So, here’s the plan. Since I’m turning 30 I wanted to ask the gluten free community for a birthday gift. Don’t worry, I’m not asking you to buy me a huge gluten free cake dripping with butter icing and jam and ship it out to me in California, although anyone who wants to please go right ahead. 😉 I’m asking you to tell me about your gluten free town.
How to get involved.
Following my 30th birthday the plan is to publish 30 of your posts, posts about your gluten-free town! I want you to tell me where you live and why the gluten free community should visit your gluten free town. What fantastic gluten free goodies can gluten free folks expect to find if they visit your town?
When I say town it can be your home-town or the town you live in now. I should also clarify that when I say town this means the village, town or city in which you live (or lived) no matter how big or small.

Peanut Butter Potato Cakes
These gluten free, spicy peanut butter potato cakes are a great recipe if you’ve got some leftover mashed potatoes that you fancy turning into something tasty. This dish makes a particularly yummy breakfast. I do realise that quite a few of my recent recipes have involved peanut butter in some way or another and that would be because I can’t get enough of it these days. Whether creamy or crunchy I’m a big fan and it works well with so many different dishes. I like to make potato cakes with garlic and green onion mashed potatoes but it will work with your favourite mashed potatoes too.
Gluten Free Peanut Butter (UK)
A while back I wrote a post on gluten free peanut butter and jelly brands in the United States. Since this post has been pretty popular I thought I should put together a UK version for peanut butter loving folks living in or planning a trip to the UK. I never thought I’d say this but jelly is starting to sound more right than jam. Clearly I need to get home more often. 🙂

Pizza Hut UK Do Gluten Free!
Earlier this year Domino’s in the US began offering gluten free pizza and this turned out to be a controversial decision. Whilst the pizza bases they offered were themselves gluten free, the pizza was not completely gluten free as a result of cross contamination, deeming it pointless in the eyes of some and a step in the right direction to others.
Last week Pizza Hut in the UK announced that they have been working in close consultation with Coeliac UK to develop a new gluten-free pizza. Exciting news!!!
